Tofu Balls & Spaghetti

Ingredients
  1. 1 onion, diced
  2. 1 teaspoon sage
  3. 1 teaspoon thyme
  4. 1 teaspoon basil
  5. ½ teaspoon paprika
  6. 1 teaspoon salt
  7. ½ cup water
  8. 350g firm tofu, mashed
  9. 1 cup unsalted sunflower seeds, toasted and ground in coffee grinder
  10. 2 cups fresh breadcrumbs (about 4 slices bread)
  11. ½ cup tomato paste
  12. 1 tablespoon honey
Sauce
  1. 1 onion, diced
  2. 4 cloves garlic, crushed
  3. 1 tablespoon Italian herbs
  4. 1 teaspoon salt
  5. 3 tins crushed tomatoes
  6. ½ cup tomato paste
  7. ½ tablespoon honey
  8. 1 cup water
Instructions
  1. Place onion, sage, thyme, basil, paprika, salt and water in a pot and
  2. steam for 5 minutes.
  3. Add tofu, ground sunflower seeds, breadcrumbs, tomato paste and
  4. honey. Mix well.
  5. Form into balls, place on baking tray and bake at 180ºC for 30
  6. minutes or until golden brown and firm.
Sauce
  1. Saute onion and garlic.
  2. Add remaining ingredients and simmer gently for 30 minutes.
  3. Mix in tofu balls and serve on wholemeal spaghetti.
